Wegetarian Wednesday Grilled Eggplant Roasted Red Pepper Pannini


This was lunch for Wegetarian Wednesday. I grilled eggplant slices on the grill then built panninis using ciabatta bread, roasted red peppers and mozzarella. I then placed the pannni back on the grill using a cast iron frying pan as a weight to press it down. Cooked 4 min turned over and cooked 4 more min.
